Luck O' The Irish to Ya!

Image a beautiful day. The sun is shinning, the kids are home for spring break, the house is clean, everyone is happy and we are all in the kitchen helping make our spectacular Irish feast!


First we load the crock-pot with our corn beef, cabbage, carrots, onions, and of course potatoes. Then we whip up the batter for the pop overs. Next comes the Rainbow cake preparation. With everyone gathered around the island we put together the ingredients for a white cake ( you know the box kind). We separated the batter into 6  bowls to make 6 colors. Everyone got to ad a color to their bowl and mix it in. It then went into a greased and floured bunt pan, layering the colors. When it came out it was gorgeous and we topped with a chocolate frosting drizzle.

While the corn beef finished, we cooked the popovers, gave hair cuts (which I did on my own for the first time. They turned out well...for my first time) and cleaned up our mess. Everyone helped and didn't even complain.

Because we had made so much food we invited some friends over to share it with us. 
Now picture us all at the table enjoying our efforts and each others company with the feast lain out before us.

You have that mental picture? 

Good because that is the only pictures I have seen I mistakenly formatted the memory card. We definitely had had the Luck of the Irish with us that day...but not so much when I uploaded the pictures...Let's blame the leprechauns!

Laundry Basket Chariot and Rainbow Cake

It's great to be so little...

... And to have big brothers to push your chariot. The new favorite thing to do is to push Annalyn up and down the hall in the laundry basket. She is not complaining either she loves it.
Nicholas helped me make a rainbow cake to go with our dinner. He mixed all the colors before we put the mix in the pan.


The cake came out very interesting looking because it stuck to the pan I used. But it tasted good and the rainbow looked cool. (wish I'd have taken a picture)

While the Leprechauns stayed away this year everyone will have a lucky day with no pinching. With a tip of the hat to our Irish background (on my side). We will have corn beef and cabbage for dinner with pop overs.

Leprechauns!!!

Happy St. Patrick's Day! The boys were all prepared with their green shirt to protect them from any pinching. They were surprised by the visit that we had from some naughty Leprechauns. We took pictures of their activity and when we pulled the pictures up on the computer it revealed the tiny culprits. Here they are so you can watch out for them too. These guys ate a whole box of cereal and did not leave any gold.
This guy would have been caught had we known he was there, those sneaky buggers!
Just before Nicholas reached for a piece of candy he was gone!


They did leave some goodies so they can't be all that bad, Right?

Next year we vow to be more prepared with a couple of sneaky traps to caught them. We wouldn't mind some of that Leprechaun Gold! Watch out and Good Luck!!
